This IPA was inspired by a recent trip to San Diego where we drank almost every West Coast IPA in the city! Well that would be impossible but we tried so many versions of the style. Some of the IPAs that we really enjoyed were dry yet had enough body to feel well rounded, very heavily dry hopped and booming with hop character, soft yet highly bittered. But what unites all of the great versions of the style is the ability to remain drinkable and refreshing. This style of IPA felt like the perfect way to showcase our selected lots of Simcoe, a hop that played a huge role in the evolution of West Coast IPA. Big notes of pithy grapefriuit and lemon zest, lots of fresh cut grass, slight sweet pear and none of the cream like character that a lot of Simcoe has these days. This batch feels like Simcoe and this beer will delight all fans of that hop.
